Meal: Mediterranean Chicken

Ingredients

1 1/2 lbs chicken breast

2 tbsp cooking oil

6 oz bulk chorizo or bulk Italian sausage

2 medium onions, cut into wedges

3 cloves garlic, minced

2 1/4 cups chicken broth

3/4 cup long grain rice

1/2 tsp dried oregano, crushed

1/4 tsp pepper

10 oz frozen peas, thawed

1 medium green or sweet red pepper, cut into 1" squares

Directions

1. Heat oil in a Dutch oven over medium heat.

2. Add chicken; cook about 15 minutes or until lightly browned all over, turning as needed.

3. Remove chicken and set aside; discard drippings.

4. Add sausage, onions, and garlic to pan; cook over medium heat 8-10 minutes or until sausage is no longer pink.

5. Drain; return to dutch oven.

6. Add chicken stock, rice, oregano, and pepper.

7. Bring to boiling, scraping up browned bits from pot.

8. Place chicken atop sausage mixture; reduce heat, cover, and simmer 15 minutes until chicken is nearly tender, turning chicken once.

9. Add peas and green or red pepper to mixture.

10. Cook, covered, 5 minutes more or until chicken is tender and done.
