Main Dish: Parmesan Batter-Fried Chicken

Ingredients
1 1/2 lbs chicken tenderloins
2/3 cup flour
1/3 cup cornmeal
1/2 tsp baking powder
1/8 tsp ground red pepper
1/4 cup grated Parmesan cheese
2 tbsp snipped parsley
1/ tsp garlic powder
1 beaten egg
2/3 cup milk
2 tbsp cooking oil
vegetable oil for deep-frying
Directions
1. In a large saucepan, cover chicken with lightly salted water.
2. Bring to boiling; reduce heat.
3. Cover and simmer for 15-20 minutes or until chicken is done.
4. In a mixing bowl, combine flour, cornmeal, baking powder, garlic powder, cheese, red pepper, and parsley.
5. Stir together egg, milk, and 2 tbsp oil; add to flour mixture; beat till smooth.
6. In a heavy saucepan or deep-fat fryer heat 1 1/4" oil to 365 F.
7. Dip chicken pieces, one at a time, into batter; shake off excess.
8. Carefully lower into hot oil; fry, two or three pieces at a time, 2-3 minutes or until golden, turning once.
