Meal: Turkey Croquettes with Spinach Mashers

Ingredients

3 large starchy potatoes, peeled and cubed

coarse salt

1 1/3 lb ground turkey

2 celery ribs, finely chopped

1 small yellow onion, finely chopped

2 tsp poultry seasoning

3 tbsp fresh thyme, chopped

3 tbsp fresh parsley, chopped

coarse black pepper

1 egg yolk

2 cups plain bread crumbs

1/4 cup vegetable oil

4 tbsp butter

3 tbsp flour

2 1/2 cup chicken stock

1/2 cup cream

1 lb baby spinach leaves (optionally shredded)

Directions

1. Place potatoes in a pot and cover with cold water; cover and bring to boil.

2. Salt water; cook potatoes until tender, about 15 minutes.

3. Place turkey in a mixing bowl. Add celery, onions, poultry seasoning, thyme, parsley, salt, pepper, and egg yolk; combine well.

4. Form into 8 patties; coat each with bread crumbs.

5. Heat vegetable oil in a large skillet over medium to medium-high heat.

6. Cook patties 5 minutes each side; remove to a plate and cover to keep warm.

7. Reduce heat to low; add 2 tbsp butter to skillet.

8. Whisk in flour; cook for a minute or two.

9. Whisk in 2 cups of chicken stock; bring to a bubble.

10. Allow to thicken for a minute or two, then turn off heat; season with salt and pepper.

11. Drain cooked potatoes; return to pot.

14. Add 2 tbsp butter, remaining 1/2 cup chicken stock, and cream to pot; mash potatoes and season with salt and pepper.

15. Fold in spinach leaves until they wilt into the potatoes.

16. Serve croquettes and gravy over spinach mashers.
