Meal: Mulligatawny

Ingredients

2 lb chicken breasts

2 tbsp flour

2 tsp curry powder

1/2 tsp ground ginger

1 tsp ground turmeric

2 1/4 oz butter

12 black peppercorns

6 whole cloves

6 cup chicken stock

1 large apple, peeled, cored, and chopped

2 tbsp lemon juice

1/2 cup cream

steamed rice, to serve

Directions

1. Combine flour, curry powder, ginger, and turmeric in a bowl.

2. Rub mixture into chicken.

3. Heat butter in a large saucepan over medium-high heat.

4. Cook chicken until lightly browned on all sides.

5. Tie peppercorns and cloves in a small piece of muslin; add with chicken stock to the pan.

6. Bring to boil; reduce heat and simmer, covered, 1 hour.

7. Add apple; cook, covered, additional 15 minutes.

8. Remove chicken from pan and shred; return to pan.

9. Stir in lemon juice and cream.

10. Heat through; do not boil.

11. Serve with steamed rice.
