Side Dish: Fragrant Brown Rice

Ingredients

1 tbsp olive oil

2 shallots, minced

1/4 tsp black caraway seeds

1 small cinnamon stick

2 whole cloves

2 allspice berries

1 bay leaf

1/2 cup brown rice

1 cup chicken broth

salt and black pepper to taste

Directions

1. Heat oil in a small saucepan over medium heat.

2. Add shallots and saute 2-3 minutes.

3. Add caraway seeds, cinnamon stick, cloves, allspice, and bay leaf; saute 2 minutes more, stirring constantly.

4. Add brown rice; stir 1-2 minutes or until grains are shiny.

5. Add chicken broth; bring to a boil.

6. Reduce heat to low; cover and cook 45-50 minutes.

7. Remove from heat; leave covered for 5 minutes.

8. Remove cinnamon stick and bay leaf; also remove allspice and cloves if possible.

9. Season with salt and pepper.
