Meal: Chicken Stew with Dumplings

Ingredients

Stew:

3 1/2 cups chicken broth

10 oz frozen mixed vegetables

1 cup small frozen whole onions

1/2 tsp dried basel

1/8 tsp garlic powder

1/8 tsp pepper

1/3 cup flour

2 cups chopped cooked chicken or turkey

Dumplings:

2/3 cup flour

1 tbsp snipped parsley

1 tsp baking powder

1/8 tsp dried basil

1/4 cup milk

2 tbsp vegetable oil

Directions

1. In a large saucepan, combine 2 1/2 cups of broth, mixed vegetables, onions, basil, garlic powder, and pepper.

2. Bring to boil.

3. Combine remaining 1 cup broth and flour; stir into saucepan.

4. Stir in chicken; cook and stir until thickened and bubbly.

5. Making dumpling batter, below.

6. Drop dumpling mixture by tablespoon into bubbling stew to make 4-8 mounds.

7. Cover; simmer on low 12-15 minutes or until a toothpick inserted into dumplings comes out clean.

Dumplings:

1. In a mixing bowl, combine flour, parsley, baking powder, and basil.

2. Combine milk and oil; pour into flour mixture and stir with a fork until combined.
