Meal: Cornmeal Pancakes

Ingredients
1 1/4 cup yellow cornmeal
3/4 cup flour
1 3/4 tsp baking powder
3/4 tsp salt
1 2/3 cup milk
1/4 cup butter, melted
1/4 cup maple syrup or honey
2 eggs
Directions
1. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
2. In a medium bowl, whisk together milk, butter, syrup, and eggs.
3. Pour wet ingredients over dry ingredients; combine with a few strokes of the whisk; don't over-mix.
4. Cook on a 375 F griddle.
