Meal: Stuffed Turkey Tenderloins

Ingredients
2 8oz turkey breast tenderloins
2 cups chopped spinach
3 oz semisoft goat cheese or feta cheese, crumbled
1/2 tsp black pepper
1 tbsp olive oil
1 tsp paprika
1/2 tsp salt
1/4 tsp ground red pepper
Directions
1. Make a pocket in each tenderloin by cutting lengthwise from one side almost to, but not through, other side.
2. In a medium bowl, combine spinach, cheese, and black pepper.
3. Spoon stufing into pockets.
4. Tie a 100% cotton string around each tenderloin in a few places to hold closed.
5. In a small bowl, combine paprika, salt, and red pepper.
6. Brush evenly over turkey.
7. Grill turkey over medium heat 16-20 minutes or until turkey is done, turning once.
8. Remove and discard strings; slice crosswise and serve.
