Meal: Pretzel Crusted Chicken Breasts with Cheddar-Mustard Sauce

Ingredients
4 chicken breasts
5 oz salted pretzels
1 tbsp fresh thyme, chopped
ground black pepper
2 eggs
vegetable oil for frying
2 tbsp butter
2 tbsp flour
2 cup milk
2 cup grated sharp yellow Cheddar cheese
1 cup grated extra-sharp white Cheddar cheese
2 tbsp spicy brown mustard
coarse salt
1/4 cup fresh parsley, chopped
1/4 small yellow onion, finely chopped
1 lemon, cut into wedges
Directions
1. Flatten chicken breasts to 1/4" thickness
2. Place pretzels in a food process or blender; grind until fine.
3. Transfer ground pretzel to a shallow dish; mix with thyme and pepper.
4. Beat 2 eggs in a second shallow dish with a splash of water.
5. For each chicken breast, dip in egg, then pretzels, then egg again.
6. Preheat a large skillet with 1/4" of vegetable oil on high.
7. Cook chicken breasts, in batches if necessary, 3-4 minutes each side or until breading is evenly browned and chicken is done.
8. In a medium saucepot over medium heat, melt butter.
9. Add flour; whisk together and cook for 1 minute.
10. Whisk in milk, allow to come to a bubble.
11. Stir in cheese and mustard; allow cheese to melt.
12. Season with salt and pepper; remove from heat.
13. Transfer chicken to plates serve drizzled with cheese sauce and sprinkled with parsley and onion.
