Meal: Poached Chicken Breasts with Tarragon

Ingredients
1 1/2 cups chicken broth
1/2 cup dry white wine
2 tsp tarragon
1 medium onion, thinly sliced
1 green pepper, thinly sliced
1/2 tsp salt
1/8 tsp pepper
4 chicken breast halves, cut into 1" cubes
1 tbsp Dijon mustard
2 tbsp flour
3/4 cup water
1 tsp chopped parsley
Directions
1. In a large heavy saucepan, combine broth, wine, tarragon, onion, green pepper, salt and pepper.
2. Simmer 5-10 minutes or until vegetables are tender
3. Add chicken; simmer additional 15-20 minutes or until chicken is done.
4. With a slotted spoon, remove chicken and vegetables and reserve.
5. In a small bowl, whisk together mustard, flour, and water.
6. Whisk mustard mixture into sauce; simmer 3-5 minutes or until sauce has thickened.
7. Ladle sauce over chicken and vegetables; serve, garnished with parsley
