Meal: Bacon-Wrapped Chicken Breasts with Applesauce

Ingredients
1 tbsp balsamic vinegar
1/4 tsp salt
4 chicken breasts, cut into thirds
2 lbs apples, peeled, cored, coarsely chopped
1/2 cup apple cider
1/4 cup sugar
1/4 tsp ground cinnamon
12 slices bacon
Directions
1. In a medium bowl, with a fork, mix vinegar and salt.
2. Add chicken to vinegar; toss to coat and set aside.
3. In a saucepan, combine apples, cider, sugar, and cinnamon; heat to boiling over high heat.
4. Reduce heat to low; simmer until apples are very tender, about 15 minutes.
5. Wrap 1 slice bacon around each chicken breast part; secure with toothpick.
6. Heat a large skillet over medium heat.
7. Add chicken and cook, turning once, until bacon has browned and juices run clear; 15-17 minutes.
8. Coarsely mash apples.
9. Discard toothpicks; serve chicken over applesauce.
