Main Dish: Panko-Mustard Chicken

Ingredients
1 med shallot, minced
2 tbsp butter
2 tbsp whole-seed Dijon mustard
2 tsp chopped fresh tarragon
1/2 cup panko or plain dried bread crumbs
4 medium chicken breast halves
1/4 tsp salt
Directions
1. Preheat oven to 475 F
2. In a small microwave-safe bowl, place shallot and 2 tsp butter.
3. Microwave on high 1 minute.
4. Stir in mustard and tarragon.
5. Melt remaining butter; combine with panko in a small bowl.
6. Arrange chicken breasts in a jelly-roll pan.
7. Spread mustard mixture evenly over breasts.
8. Top with panko mixture; pat gently to adhere.
9. Bake in top third of oven, 12-15 minutes or until done.
