Main Dish: Double-dipped Potato-Chip Chicken

Ingredients

2 oz potato chips (about 2 cups)

1 egg

2 chicken breasts

1/8 tsp black pepper

Directions

1. Preheat oven to 450 F

2. Place potato chips in a large, sealed plastic bag.

3. Using a rolling pin, crush chips to make crumbs.

4. With fork, beat egg in a shallow dish.

5. Dip each chicken breast in egg, then transfer to crumbs in bag and coat thoroughly.

6. Dip each chicken breast a second time, to completely coat.

7. Transfer chicken to an ungreased cookie sheet.

8. Sprinkle both sides of chicken with 1/8 tsp pepper.

9. Bake 15 minutes or until done.
