Main Dish: Carolina Chicken Pilau

Ingredients
1 tsp olive oil
4 chicken breasts
2 slices turkey bacon, cut into 1/4" pieces
1 large onion, thinly sliced
1 cup long grain white rice
1 3/4 cup chicken broth
1/2 cup water
1/4 tsp salt
1/4 tsp coarsely ground black pepper
1/2 cup fresh parsley, chopped
Directions
1. In a nonstick skillet, heat oil over medium high heat.
2. Add chicken; cook, turning once, about 8 minutes or until golden.
3. Remove chicken to plate and reserve.
4. Reduce heat to medium.
5. Add bacon; cook, stirring frequently, about 4 minutes or until browned.
6. Transfer bacon to a small bowl; reserve.
7. Add onion to skillet; cook, covered, stirring occasionally, until tender and lightly browned, or about 10 minutes.
8. Add rice; stir until evenly coated.
9. Stir in bacon, broth, water, salt, and pepper.
10. Return chicken to skillet; heat to boiling over medium-high heat.
11. Reduce heat to medium low; cook, covered, until chicken and rice are both done, about 20-25 minutes.
12. Sprinkle with parsley; serve.
