Side Dish: Red Fried Rice

Ingredients
1 cup basmati rice
2 tbsp peanut oil
1 large red onion, chopped
1 red bell pepper, seeded and chopped
4 eggs, beaten
salt and ground black pepper
Directions
1. Wash rice several times in a bowl of cold water. Drain well.
2. Bring a large pan of water to a boil; add rice and cook 10-12 minutes.
3. Heat oil in a wok until very hot.
4. Add onion and pepper; stir fry 4-5 minutes.
5. Pour in beaten eggs all at once.
6. Cook for 30 seconds without stirring, then stir to break up egg as it sets.
7. Drain cooked rice thoroughly
8. Add to wok and toss it over the heat with egg and vegetable mixture for 3 minutes.
9. Season to taste.
