Meal: Rotelli Florentine

Ingredients

8 oz rotelli

1 tbsp olive oil

1 small onion, finely chopped

1 garlic clove, minced

1/2 lb fresh spinach, chopped

1 tbsp chopped parsley

1/2 tsp dried basil

1/8 tsp nutmeg

1/8 tsp pepper

Directions

1. Cook rotelli in salted pot until tender but firm, about 12 minutes; drain.

2. Heat olive oil in a large nonstick skillet over medium heat.

3. Add onion and garlic; cook until softened but not brown, about 3 minutes.

4. Add spinach, parsley, basil, nutmeg, salt and pepper; cook 3 minutes, stirring occasionally.

5. Toss rotelli and spinach mixture; serve.
