Meal: Chicken and Dumplings

Ingredients
3 chicken breasts, cut up
1/2 cup chopped onion
1/2 tsp poultry seasoning
1/4 tsp salt
1/4 tsp pepper
1 cup broccoli
1 cup frozen peas
1/4 cup flour (for gravy)
Dumplings:
2/3 cup flour
1 tbsp snipped parsley
1 tsp baking powder
1/8 tsp dried basil or crushed thyme
1/8 tsp salt
1/4 cup milk
2 tbsp olive oil
Directions
1. In a Dutch oven, combine chicken, onion, poultry seasoning, salt, and pepper with 3 cups water.
2. Bring to boiling; reduce heat to simmer.
3. Cover; simmer 25 minutes.
4. Add broccoli and peas; simmer 5 minutes more.
5. In a bowl, mix 2/3 cup flour, parsley, baking powder, basil or thyme and 1/8 tsp salt.
6. Combine milk and oil; pour into flour mixture.
7. Stir with fork until combined.
8. Drop dumpling mixture by the tablespoon into simmering stew.
9. Cover; simmer 12 minutes or until toothpick inserted into dumplings comes out clean.
10. Remove dumplings, chicken, and vegetables with a slotted spoon; reserve.
12. Mix 1/2 cup cold water into 1/4 cup flour; stir into broth in Dutch oven.
13. Cook and stir until bubbly; cook and stir 1 minute more.
14. Season to taste with salt and pepper.
15. Serve gravy over chicken and dumplings.
