Meal: Creamed Turkey over Potatoes

Ingredients

2 lb potatoes, cut up

1 medium onion, chopped

1/4 cup butter

1/4 cup flour

1 1/2 cup chicken broth

2 cups cooked turkey

1 cup milk

1/2 cup cubed swiss cheese

1/2 tsp salt

1/4 tsp pepper

1/4 tsp ground nutmeg

additional milk for potatoes to taste

Directions

1. Cook potatoes as per usual directions. When cooked, drain, then return to pot and mash with milk to desired consistency.

2. In a large skillet, saute onion in butter until tender.

3. Stir in flour until blended.

4. Gradually stir in broth.

5. Bring to boil; cook and stir for 2 minutes.

6. Reduce heat; stir in turkey, milk, cheese, salt, pepper, and nutmeg.

7. Cook until cheese melts and mixture is heated through.

8. Serve over potatoes.
