Meal: Baked Potato Soup

Prep Time: 30 minutes

Ingredients

2 tbsp olive oil

3 strips turkey bacon, diced

1 small onion, chopped

1 clove garlic, minced

3 tbsp flour

1 tsp salt

1 tsp dried basil

1/2 tsp pepper

3 cup chicken broth

2 large potatoes, baked, peeled, and cubed

1 cup heavy whipping cream

shredded cheddar cheese

minced fresh parsley

Directions

1. Heat olive oil over medium heat in a large saucepan

2. Add bacon; cook until crisp.

3. Remove bacon; reserve.

4. Add garlic and onion; saute until tender.

5. Stir in flour, salt, basil, and pepper; mix well.

6. Gradually add broth.

7. Bring to boil; boil and stir 2 minutes.

8. Add potatoes, cream, hot pepper sauce.

9. Heat through; do not allow to boil.

10. Garnish with bacon, cheese, and parsley.
