Meal: Pineapple-Orange Ginger Turkey

Ingredients
1 lb turkey breast tenderloin steaks
4 tbsp soy sauce
2 tbsp dry sherry
3 oz orange juice concentrate, thawed
1 tbsp water
2 tsp cornstarch
1/2 tsp sugar
1 tbsp cooking oil
2 tsp grated ginger
1 medium red or green pepper, cut into bite-sized strips
1 8oz can pineapple chunks, drained
2 cups hot cooked rice
Directions
1. Rinse turkey, apt dry with paper towels.
2. Cut turkey into thin bite-size strips.
3. In a medium bowl, stir together turkey, 2 tbsp soy sauce, and sherry.
4. Cover; chill for 30 minutes to 1 hour.
5. In a small bowl, stir together orange juice concentrate, 2 tbsp soy sauce, water, cornstarch, and sugar. Set aside.
6. Heat oil in a wok or large skillet over medium-high heat.
7. Stir-fry gingerroot 15 seconds.
8. Add pepper strips; stir-fry 1-2 minutes until crisp-tender.
9. Remove pepper strips; set aside and reserve.
10. Add half of turkey mixture to wok; stir-fry 2-3 minutes or until turkey is tender and no longer pink.
11. Remove turkey from wok and reserve; repeat with remaining turkey mixture.
12. Return all turkey to the wok; push to one side.
13. Add sauce to the center of the wok.
14. Cook and stir sauce until thickened and bubbly.
15. Return pepper strips to wok with pineapple; stir all ingredients together to coat.
16. Cook and stir 1 minute more or until mixture is heate through.
17. Serve over hot rice.
