Meal: Spinach Tagliarini w/ Asparagus

Ingredients

2 chicken breasts

1 TB soy

2 TB sherry

2 TB Cornstarch

8 scallions, cut into 1 inch diagonal slices

1-2 garlic cloves, crushed

Zest of 1/2 a lemon, finely julienned

2/3 cup chicken stock

1 tsp sugar

2 TB lemon juice

8 oz slender asparagus, cut into 3" pieces

1 lb fresh Tagliarini (Spinach flavor)

Directions

Flatten Chicken breasts to 1/4 inch and cut across grain into 1" strips

Put in bowl with soy sauce, sherry and cornstarch and toss to coat

Put chicken, shallots, garlic, and zest into pan

add stock and boil, stirring until thick

add sugar, lemon, and asparagus

simmer 4-5 mins

cook pasta and server
