Meal: Lemon and Parmesan Capellini with Herb Bread

Ingredients

1/2 whole wheat baguette

4 TB soft butter

1 garlic clove, crushed

2 TB chopped fresh herbs

8 oz capellini

1 cup light cream

3 oz grated Parmesan cheese

1 lemon zest

Directions

1. Preheat oven to 400 degrees

2. Cut baguette into thick slices

3. Put butter in bowl with garlic and herbs, beat

4. Spread butter onto each side of each slice of bread; then reassemble into a loaf

5. Wrap bread in foil and bake for 10 mins

6. Cook pasta according to package directions

7. Pour cream into pan and bring to light simmer

8. Stir Parmesan cheese and lemon zest into cream; cook 30 seconds to thicken

9. Drain pasta and return to pan

10. Pour sauce over pasta and toss to coat

11. Serve, sprinkled with additional Parmesan and zest and accompanied by bread
