Meal: Tagliatelle with Chicken and Herb Sauce

Ingredients

2 tbsp olive oil

1 red onion, cut into wedges

12 oz tagliatelle

1 garlic clove, chopped

2 1/2 cups chicken, diced

1 1/4 cups dry vermouth or dry white wine

3 tbsp chopped fresh mixed herbs

2/3 cup plain yogurt

salt and black pepper to taste

shredded fresh mint to garnish

Directions

1. Heat oil in a large skillet.

2. Add onion wedges; cook for 10 minutes until softened and separated.

3. Cook pasta according to package directions.

4. Add garlic and chicken to the skillet.

5. Cook 10 minutes until chicken is browned and cooked through, stirring occasionally.

6. Add vermouth/white wine and bring to a boil.

7. Boil rapidly until liquid has reduced by about half.

8. Reduce heat; stir in herbs, yogurt, and seasoning.

9. Heat through gently - do not allow to boil.

10. Toss pasta with sauce to coat; serve garnished with mint.
