Main Dish: Velvet Pumpkin Soup

Ingredients

4 TB butter

3 cloves garlic, minced

1 whole onion, diced

1 and 1/4 tsp curry powder

1/2 tsp salt

1/4 tsp ground coriander

1/8 tsp cayenne pepper

3 cups chicken broth

1 can 15-16oz solid pack pumpkin

1 12 oz can evaporated milk

Directions

Melt butter and saute onions until golden brown.

Add spices and simmer gently for 2 minutes.

Stir in broth and simmer partially covered for 20 minutes

Add pumpkin, stirring until smooth.

Add evaporated milk and heat over medium heat for 5 minutes. Do not allow to boil, but a simmer is okay.

In batches, transfer to a blender or food processor and process until very smooth.

Serve hot and garnish as desired with parika, nuts, croutons, herbs, pumpkin seeds, etc
