Meal: Chicken Breasts with Cherries or Peaches

Ingredients

2 cup fresh cherries, pitted (or 2 cup fresh peaches, peeled and sliced)

6 tbsp lemon juice

1 tbsp sugar

2 chicken breasts

salt and pepper to taste

1/2 tsp paprika

2 tbsp olive oil

1 cup chicken stock

4 tbsp butter

1 cup finely chopped onion

Directions

1. Mix together cherries, lemon juice, and sugar; set aside.

2. Heat oil in skillet over medium-high heat.

3. Sprinkle chicken breasts with salt, pepper, and paprika.

4. Brown chicken breasts about 2-3 minutes each side, or until lightly browned.

5. Add stock, cover, and simmer 8-10 minutes or until chicken breasts are tender.

6. Remove chicken breasts and liquid and reserve.

7. In the same pan, over medium heat, melt 2 tbsp butter and saute onion until golden brown.

8. Remove onion to bowl; drain liquid from cherries into onion and reserve.

9. Over medium heat, mlet the remaining 2 tbsp butter in the same pan.

10. Add the cherries; saute until tender.

11. Return onion mixture and liquid from chicken to pan.

12. Cover and simmer for 10 minutes.

13. Return chicken to pan; simmer for 2 minutes or until chicken is heated through.
