Meal: Stir-Fried Chicken with Snow Peas

Ingredients
2 tbsp sesame oil
6 tbsp lemon juice
1 garlic clove, crushed
1/2 inch piece fresh ginger root, peeled and grated
1 tsp honey
1 lb chicken breast, cut into strips
4 oz snow peas, trimmed
2 tbsp peanut oil
6 scallions, cut into strips
8 oz can water chestnuts, drained and thinly sliced
cooked rice, to serve
Directions
1. Combine sesame oil, lemon juice, garlic, ginger, and honey in a shallow nonmetallic dish.
2. Add chicken; mix well.
3. Cover; marinate overnight in refrigerator.
4. Blanch snow peas in lightly salted, boiling water for 1 minute.
5. Drain and refresh under cold running water.
6. Drain chicken strips; reserve marinade.
7. Heat peanut oil in wok or large skillet.
8. Add chicken; stir fry 3-4 minutes or until golden brown.
9. Add scallions, snow peas, water chestnuts, and reserved marinade.
10. Cook for a few minutes, until chicken is cooked through and sauce is bubbling and hot.
11. Serve over rice.
