Main Dish: Asian Rice and Lentil Burgers

Ingredients
Patties
1/2 C uncooked brown rice
1/4 C driend lentils (2 oz), sorted, rinsed
1 and 1/2 C water
1/4 C finely chopped cashews
2 TB unseasoned bread crumbs
2 TB Stir-fry sauce
4 medium green onions, finely chopped (1/2 C)
1 egg, beaten
Veggie sauce
1 C frozen veggies
1/2 C water
2 TB Stir-fry sauce
Noodles
Directions
1. In 2 quart sauce pan, heat rice, lentils, and water to boiling
2. reduce heat to low, cover and simmer for 30-40 minutes stirring occasionally until lentils are tender and water is absorbed
3. in saucepan, mash rice mixture with fork, stir in remaining ingredients
4. shape into patties about 1/2 inch thick
5. spray skillet with cooking spray and cook for 10 minutes, turning once
6. remove from skillet, keep warm
7. in same skillet, mix sauce ingredients, heat to boiling
8. reduce heat to medium, add patties
9. cover and cook 5-8 minutes
10. serve over noodles
