Main Dish: Chicken with Lemon Sauce

Ingredients
For the chicken:
4 chicken breasts
1 tsp sesame oil
1 tbsp dry sherry
1 egg white, lightly beaten
2 tbsp corn starch
1 tbsp vegetable oil
salt and ground white pepper
chopped cilantro leaves, scallions, and lemon wedges, to garnish
For the sauce:
3 tbsp fresh lemon juice
1 tbsp lime juice
4 tbsp superfine sugar
2 tsp cornstarch
7 tbsp cold water
Directions
1. Place chicken in a shallow bowl.
2. Mix sesame oil with sherry; add 1/2 tsp salt and 1/4 tsp pepper.
3. Pour mixture over chicen; cover and marinate for 15 minutes.
4. Combine egg white and cornstarch.
5. Add mixture to chicken; turn to coat thoroughly.
6. Heat vegetable oil in a nonstick skillet or wok.
7. Cook chicken for 15 minutes or until cooked through and golden brown on all sides; make sauce concurrently.
8. Combine all sauce ingredients (lemon juice, lime juice, sugar, cornstarch, water) in a small pan.
9. Add 1/4 tsp salt.
10. Bring to boil over low heat, stirring constantly until sauce is smooth and has thickened slightly.
11. Cut chicken into pieces.
12. Pour sauce over chicken, garnish with cilantro, lemon, and scallions to serve.
