Dessert: Elizabethan Lemon Cakes

Ingredients
2.5 cups flour
2 cups granulated sugar
6 TB unsalted butter
grated zest from 2 lemons
1 egg
2 egg yolks
1/3 cup confectioner's sugar
1.5 teasp milk
Directions
1. Preheat oven to 350
2. Grease lage baking sheet
3. Combine flour and granulated sugar in large bowl
4. cut in the butter
5. Add the zest, whole egg and yolks
6. mix thoroughly adding more flour as needed - dough should be not sticky and easily shaped by hand
7. roll dough into balls about 1 inch across and place 2in apart on baking sheet
8. Bake 15 mins
9. allow to cool 1 minute before moving to cooling rack
10. Mix confectioner's sugar and milk to a smooth consistency
11. drizzle over cooled cakes

We had to add an additional egg (used small ones), but the result was a little chewy- probably needed some more flour, though the mixture wasn't really that sticky.
