Meal: Chicken Breasts with Raspberries or Blueberries

Ingredients
4 tbsp butter
2 chicken breasts, halved, flattened to 1/3 in
1/3 cup finely chopped onion
1/3 cup raspberry vinegar (or blueberry vinegar)
1/3 cup chicken stock
1/4 cup heavy cream
30 whole fresh rasberries (or blueberries)
Directions
1. Melt butter in skillet over medium high heat.
2. Add chicken breasts; saute for 2-3 minutes each side until lightly browned.
3. Sprinkle with salt and pepper; remove to plate and reserve.
4. Add onion to pan; saute until tender.
5. Add vinegar and reduce liquid to one quarter, or until syrupy
6. REduce heat; stir in chicken stock and cream.
7. Simmer for 2-3 minutes
8. Add chicken breasts; cook 5 minutes more.
9. Remove chicken to platter and keep warm.
10. Add rasberries to sauce and gently cook over very low heat for 1 minute. Do not stir.
11. Pour raspberry sauce over chicken breasts; serve.
Option: Replace rasberries with blueberries and raspberry vinegar with blueberry vinegar
