Main Dish: Tarragon Cream Chicken (Paleo)

Ingredients

2-4 tbsp cooking fat

2lbs boneless, skinless chicken breasts cut lengthwise into 1 inch strips

4 thinly sliced scallions

1/2 lb sliced (substitute for mushrooms)

1/3 cup chicken broth

2 cloves garlic, minced

1 tsp tarragon

1/3 cup coconut milk

Directions

1. Cook the fat over high heat for 3 mins

2. Add chicken and reduce to medium high

3. cook for 2-3 minutes each side

4. remove chicken

5. add scallions, garlic and veggies

6. Saute until just softened 1-2 minutes

7. deglaze with broth, tarragon, and coconut milk

8. return chicken to pan and bring to a boil

9. simmer over low heat until sauce is thickened 2-3 minutes
