Meal: Moroccan Chicken (Paleo)

Ingredients
2-4 tbsp cooking fat
2lbs boneless, skinless chicken breasts cut lengthwise into 1 inch strips
1 onion finely diced
1 cup chicken broth
1 tsp ground cumin
1/2 tsp cinnamon
1/4 cup raisins
1/2 cup coconut milk
2 cloves garlic, minced
Directions
1. Cook the fat over high heat for 3 mins
2. Add chicken and reduce to medium high
3. Cook for 2-3 minutes each side
4. Remove chicken
5. Deglaze the pan with broth cumin and cinnamon
6. Add the onion and saute until soft (3-4 mins)
7. Add the raisins and coconut milk and bring to a boil
8. Simmer over low heat until slightly thickened (2-3 mins)
