Meal: Croque Madame

Ingredients
6 tbsp butter
1 tbsp flour, rounded
1 cup milk
salt and black pepper to taste
1/8 tsp ground nutmeg
2 tsp Dijon mustard
2 large eggs
4 slices white bread
4 deli slices ham or turkey
4 deli slices Swiss cheese (Emmentaler if available)
chopped fresh parsley, chives, or thyme for garnish
Directions
1. Place a small sauce pot over medium-low heat and melt 2 tbsp butter.
2. Whisk in flour; cook for 1 minute.
3. Whisk in milk; bring to a bubble.
4. Drop heat to low; season with salt, pepper, nutmeg, and mustard.
5. When the sauce coats the back of a spoon, turn off the heat.
6. Heat 1 tbsp butter in a medium nonstick skillet over medium low heat.
7. When the butter melts, crack in eggs, keeping whites separated from each other.
8. Cook to desired doneness, sunnyside-up or over hard.
9. While eggs cook, generously butter bread with remaining 3 tbsp butter.
10. With buttered-sides facing out, build ham (turkey) and cheese sandwiches, spreading sauce on the insides of the bread.
11. Heat a second skillet over medium heat.
12. Cook sandwiches until golden, 3 to 4 minutes, then turn and cook 2 minutes more.
13. Transfer sandwiches to plates and top with egg and additional sauce; garnish and serve.
