Meal: Chorizo Stuffed Bread Bites

Ingredients
2 tbsp olive oil
1/2 small onion, chopped
1 roasted red pepper, chopped
1 8oz package crescent rolls, such as Pillsbury
6oz manchego cheese, grated (can substitute shredded mozzarella)
Directions
Preheat oven according to crescent roll package directions
Heat oil in a medium skillet over medium-high heat.
Add chorizo and onions; cook, stirring occasionally, about 4 minutes.
Transfer chorizo and onions to a bowl; add the red peppers and stir to combine.
Unwrap crescent roll dough and separate into triangles.
Arrange triangles on a cookie sheet; place a tablespoon of chorizo mixture topped with a tablespoon of cheese near the wide edge of each triangle.
Roll the triangles toward the pointed end.
Bake according to package directions.
