Meal: Skillet Penne with Sausage and Spinach

Ingredients

1 tbsp olive oil

1 lb Italian-style chicken sausage, casings removed

3 medium garlic cloves, minced or pressed

2 1/4 cups low-sodium chicken broth

2 1/4 cups water

8 oz penne

6 oz baby spinach

2 oz Parmesan cheese, grated

salt and black pepper

Directions

1. Heat oil in a 12-inch nonstick skillet over medium-high heat.

2. Add sausage; break up and cook until lightly browned, about 3 minutes.

3. Stir in garlic; cook until fragrant, about 30 seconds.

4. Stir in broth, water, and pasta, and 1/2 tsp salt.

5. Increase heat to high and cook, stirring often, until pasta is tender and liquid has thickened, 15-18 minutes.

6. Stir in spinach, one handful at a time, and cook until wilted.

7. Remove from heat; stir in Parmesan cheese.
