Main Dish: Oven-Fried Chicken Breasts

Ingredients
5 oz coarse bread crumbs
2 tbsp olive oil
3 large egg whites
1 tbsp Dijon mustard
2 tsp thyme leaves, inced
1/4 tsp garlic powder
1/8 tsp cayenne pepper
2 lb chicken breasts
Directions
1. Adjust oven rack to the upper middle position; preheat oven to 450 degrees.
2. Cover a baking sheet with foil and place a wire rack on top.
3. Spread bread crumbs in a shallow dish; toss with oil.
4. Whisk egg whites, mustard, thyme, garlic powder, and cayenne together in a separate shallow dish.
5. Pat chicken dry and season with salt and pepper.
6. One chicken breast at a time, dip into egg mixture and allow excess to drip off before coating with bread crumbs. Place on wire rack.
7. Lightly spray the tops of the chicken with nonstick cooking spray.
8. Bake until coating is golden and chicken is done, 30-40 minutes.
