Meal: Roasted Chicken Breast with Sweet and Sour Onions

Ingredients
1 lb chicken breast
2 garlic cloves, finely chopped
1 tsp plus pinch of coarse kosher salt
1/2 tsp ground black pepper
1 sweet onion, thinly sliced
1 cup white wine
1 bay leaf
1 cinnamon stick
1 tbsp honey
2 tbsp unsalted butter
cooked rice, to serve
Directions
1. Preheat oven to 450
2. Cut chicken into 1" pieces.
3. In a large bowl, toss together the chicken, garlic, 1 tsp salt, and pepper.
4. In a small saucepan, simmer together the onion, wine, bay leaf, cinnamon stick, and a pinch of salt until most of the liquid has evaporated, about 15-20 minutes.
5. Mix in the honey and the butter and allow butter to melt.
6. Spoon mixture over the chicken and toss well.
7. Spread the chicken, onion mixture, and any juices onto a rimmed baking sheet.
8. Bake until the chicken is no longer pink and onions are tender and caramelized, about 25 minutes.
9. Serve over rice.
