Meal: Chicken Cassoulet

Ingredients
4 slices turkey bacon
2 tbsp olive oil
1/4 cup flour
salt and pepper
2 lbs chicken breasts, cut into 1" cubes
4 cooked chicken sausages, cut into 1/4in thick slices
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow or orange bell pepper, diced
1 medium onion, chopped
2 cloves garlic, finely chopped
1 tsp dried thyme
1 tsp olive oil
1 can cannellini or Great Northern beans, rinsed and drained
1 1/2 cups frozen peas, defrosted
1/2 cup dry white wine
Directions
1) Preheat oven to 350 F
2) Cook bacon in large skillet over medium-high heat until crisp; drain and cut into 1-inch pieces
3) Add 2 tbsp olive oil to skillet.
4) Place flour, salt, and pepper in a small bowl.
5) Dip chicken into flour mixture; shake off excess.
6) Brown chicken on all sides in skillet over medium-high heat; remove chicken and set aside.
7) Lightly brown sausages in same skillet; remove and set aside.
8) Add bell peppers, onion, garlic, and thyme to skillet.
9) Cook, stirring frequently, over medium-high heat for 5 minutes or until tender, adding oil as needed to prevent sticking.
10) Transfer to 13x9 baking dish.
11) Add beans and peas to dish; mix well.
12) Top dish with chicken, sausages, and bacon.
13) Add wine to skillet; deglaze skillet and then pour mixture into dish.
14) Cover and bake for 40 minutes.
15) Uncover; bake 15 minutes or until chicken is cooked through.
Notes
One inch cut up chicken, possibly 2 cans kidney bans, 1 cup peas.
