Meal: Chicken-Vegetable Soup with Orzo

Ingredients

12 oz chicken breast, cubed

1 medium onion, coarsely chopped

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1/2 tsp dried thyme

1/2 tsp dried oregano

5 cup chicken broth

1/2 cup uncooked orzo

1/2 cup frozen peas

2 tbsp grated romano cheese

Directions

1. Cook chicken, onion, peppers, and garlic in a lightly greased large saucepan until chicken is browned, about 8 minutes.

2. Add chicken broth and water; heat to boiling.

3. Stir in orzo and peas.

4. Reduce heat; simmer, uncovered, until orzo is al dente, about 7 minutes.

5. Season to taste with salt and pepper; stir in cheese.
