Meal: Sweet-Sour Turkey Stew

Ingredients
1/2 cup sliced onion
1/2 cup sliced red bell pepper
1/2 cup sliced green bell pepper
2 tbsp toasted sesame oil
8 oz (1 can) pineapple tidbits, in juice, undrained
1/3 cup packed light brown sugar
1/3 cup apple cider vinegar
2 tbsp cornstarch
1 cup cut green beans
1 1/2 cups cooked turkey, cubed (can substitute chicken)
2 tbsp soy sauce
cooked rice, to serve
Directions
1. Saute onion and bell peppers in oil in large skillet until tender, about 5 minutes.
2. Drain pineapple, reserving 1/3 cup juice.
3. Combine reserved juice, brown sugar, vinegar, and cornstarch in a small bowl.
4. Stir liquids into skillet and heat to boiling, stirring until thickened, about 1 minute.
5. Add beans; reduce heat and simmer, covered, until beans are tender, about 10 minutes.
6. Stir in pineapple, turkey, and soy sauce; simmer until hot, 2-3 minutes.
7. Serve over rice.
