Meal: Country Chicken Hotch-Potch

Prep Time: 150 minutes

Ingredients

4 chicken breasts

6 medium potatoes, cut into 1/4 inch slices

2 sprigs thyme

2 sprigs rosemary

2 bay leaves

1 cup bacon, diced

1 large onion, chopped finely

1 cup sliced carrots

2/3 cup stout

2 tbsp melted butter

salt and pepper

Directions

Preheat oven to 300

1. Arrange a layer of potato slices in the bottom of a wide casserole (dutch oven?)

2. Season with salt and pepper then add the thyme rosemary and bay leaves

3. Top with the chicken quarters

4. Sprinkle with bacon, onion, carrots

5. season well

6. Arrange the remaining potatoes on top, overlapping slightly

7. Pour Stout over

8. Brush the potatoes with melted butter and cover with lid

9. Cook for 1.5 hours

10. Remove lid and cook for 30 minutes longer
