Meal: Chicken, Bell Pepper, and Orange Stir-Fry

Ingredients
3 tbsp sunflower oil
12 oz boneless chicken cut into thin strips
1 onion sliced
1 clove garlic, minced
1 red bell pepper, sliced
1.25 cups snow peas
4 tbsp light soy sauce
4 tbsp sherry
finely grated peel and juice of 1 orange
1 tsp cornstarch
2 oranges
1 cup beansprouts
cooked noodles or rice
Directions
1. Heat the sunflower oil in a large wok
2. Add the strips of chicken and sir-fry for 2-3 minutes until just cooked on all sides.
3. Add the sliced onion, garlic, bell pepper, and snow peas
4. Stir-fry 5 minutes or until the just becoming tender and chicken is cooked through
5. mix together the soy sauce, sherry, orange peel and juice and cornstarch
6. Add to the wok and stir until is starts to thicken
7. Using a sharp knife, peel and segment the oranges
8. Add the orange segments and beansprouts and heat through for 2 minutes
9. Serve over noodles or rice

Take care not to overcook chicken.
