Meal: Turkey Lasagne

Ingredients

2 TBSP Olive Oil

1 onion, chopped

2 garlic cloves, chopped

1 lb cooked turkey meat diced finely

1 cup mascarpone cheese

2 TBSP chopped fresh tarragon

11 ounces broccoli, broken into flowerets

4 ounces no pre-cook lasagne verde

salt and pepper

1/4 cup butter

2 TBSP flour

2.5 cups milk

1 cup freshly grated parmesan cheese

Directions

1. Pre-heat the oven to 350

2. Heat the oil in the pan and cook the onions and garlic until softened

3. Remove from the heat, stir in the turkey, cheese, and tarragon with seasoning to taste

4. Blanch the broccoli in a large pan of salted, boiling water for 1 minute then drain and rinse thoroughly under cold water to prevent it from overcooking

5. To make the sauce, melt the butter in a pan, stir in the flour and cook for 1 minute while stirring

6. Remove from the heat and add the milk slowly

7. Return to the heat and bring the sauce to boiling slowly, stirring constantly

8. Simmer for 1 minute, then add 2/3 cup of the grated parmesan and salt

9. Roughly chop the broccoli.

10. Spoon a layer of turkey into a large shallow overproof dish

11. Add a layer of broccoli and cover with sheets of lasagne

12. Coat with cheese sauce.

13. Repeat these layers finishing with a cheese coat. Sprinkle with the remaining parmesan cheese and bake for 35-40 minutes
