Meal: Old English Chicken Stewed in Ale

Ingredients
2 chicken breasts - cut in half
2 TBSP all-purpose flour
2 TBSP mustard powder
2 TBSP Sunflower oil
1 TBSP Butter
4 small onions
2.5 cups beer
2 TBSP Worcestershire sauce
3 TBSP Fresh sage or 2tsp dried sage
salt and pepper
1/2 grated hard english cheddar
1 tsp mustard powder
1 tsp all-purpose flour
1 tsp Worcestershire sauce
1 TBSP Beer
2 slices whole wheat toast
Directions
1. Toss chicken in flour and mustard
2. Heat the oil and butter in a large flameproof casserole
3. Fry the chicken over medium-high heat, turning occasionally until golden
4. Remove chicken and keep hot
5. Peel the onions and slice into wedges then fry quickly until golden
6. Add the chicken, beer, Worcestershire sauce, sage, and salt and pepper
7. Bring to a boil, cover, and simmer until the chicken is very tender
Make the Rarebit toasts:
1. Mix the cheese, mustard powder, flour, Worcestershire sauce, and beer.
2. Spread on toasts and cook under hot broiler for 1 minute until melted and golden
3. Cut into triangles
