Meal: Skillet Chicken, Broccoli, and Ziti

Ingredients

4 tbsp olive oil

1 lb boneless, skinless chicken breasts, trimmed and sliced thin

1 medium onion, minced

6 garlic cloves, minced

1/4 tsp red pepper flakes

2 cups chicken broth

2 cups water

1/2 cup dry white wine

8 oz ziti

8 oz broccoli florets

2 oz parmesan cheese, grated

Directions

1. Heat 1 tbsp oil in a 12 inch nonstick skillet over medium-high heat until just smoking.

2. Add chicken, break up any clumps, and cook without stirring until beginning to brown, about 1 minute.

3. Stir the chicken and continue to cook until cooked through, about 2 minutes.

4. Transfer chicken to a medium bowl, cover, and set aside.

5. Add 1 tbsp oil to the skillet along with onion and 1/4 tsp salt.

6. Reduce heat to medium and cook until fragrant, about 30 seconds.

7. Stir in broth, wine, water, pasta, and 1/4 tsp salt.

8. Increase heat to high and cook, stirring often, for 12 minutes.

9. Add broccoli and continue to simmer until pasta and broccoli are tender and liquid has thickened, about 5 minutes.

10. Return the chicken to the skillet to warm through.

11. Remove from heat and stir in remaining 2 tbsp oil and parmesan cheese.
