Meal: Chicken Divan Casserole

Ingredients
1 cup uncooked rice
1 cup coarsely shredded carrots
4 chicken breasts
4 tbsp butter
6 tbsp flour
1/2 tsp salt
black pepper
2 cup chicken broth
1 cup milk
1/2 cup dry white wine
1 cup grated parmesan cheese, divided
1 lb frozen broccoli florets
Directions
1. Preheat oven to 350 f.
2. Lightly grease a 12x8 baking dish.
3. Prepare rice according to package directions.
4. Stir in carrots; spoon mixture into baking dish.
5. Spray large skillet with cooking spray and heat over medium-high heat.
6. Brown chicken breasts about 2 minutes each side; arrange over rice.
7. Melt butter in a 2-quart saucepan over medium heat.
8. Whisk in flour, salt, and pepper to taste; cook and stir 1 minute.
9. Gradually whisk in broth and milk; bring to boil.
10. Reduce heat and simmer 2 minutes.
11. Stir in wine; bring back to simmer.
12. Remove from heat and stir in 2/3 cup cheese.
13. Arrange broccoli around chicken.
14. Pour sauce over top of broccoli, chicken, and rice; top with remaining 1/3 cup cheese.
15. Cover with foil; bake 40 minutes.
16. Remove foil; bake 10-15 minutes or until chicken is no longer pink in center.
