Meal: Chicken Fajitas

Ingredients

4 chicken breasts

3 tbsp olive oil

1/4 cup lime juice

2 garlic cloves, crushed

1 tsp ground cumin

2 tbsp chopped cilantro leaves

flour tortillas

2 onions, sliced

2 green peppers, julienned

1 cup grated cheddar cheese

Directions

1. Cut chicken into thin strips and place into a shallow non-metallic dish.

2. Combine 2 tbsp olive oil, lime juice, garlic, cumin, and coriander in a small bowl; mix well.

3. Pour mixutre over chicken; cover and refrigerate several hours or overnight.

4. Preheat flat plate to high.

5. Add 1 tbsp oil to flat plate; add onion and pepper and cook for 5 minutes or until soft.

6. Move vegetables to a cooler part of the plate (or remove and keep warm).

7. Place chicken and marinade on the flat plat and cook for 5 minutes or until cooked through.

8. Make each individual fajita by combining chicken, onion, and pepper on a tortilla and topping with chedder cheese.
