Main Dish: Savory Chicken Sausages

Ingredients
2.5 cups bread crumbs
12 oz cooked chicken, ground
1 small onion, finely chopped
pinch mixed herbs
pinch mustard powder
2 eggs, whole
1 egg, separated
4 tbsp milk
crisp bread crumbs for coating
2 tbsp olive oil
salt and pepper
Directions
1. Cook the ground and crumble.
2. In a large bowl, combine bread crumbs, chicken, onion, mixed herbs, and mustard powder; season with salt and pepper to taste.
3. Mix together until thoroughly incorporated.
4. Add 2 whole eggs and 1 egg yolk with a little milk to bind the mixutre.
5. Divide mixture into 8 and shape into sausages.
6. Whisk the remaining egg white until frothy.
7. Coat the sausages in egg white and then in the crips bread crumbs.
8. Heat the oil and fry sausages for 6 minutes or until golden brown.
