Meal: Chicken Fricassee

Ingredients
Main Dish:
1/4 cup butter
3-3.5 lb broiler-fryer chicken or 6 chicken breasts
2 cup water
2 cup broccoli
1 medium onion, chopped
1 tsp salt
1/2 tsp dried thyme leaves
2 cloves
1 bay leaf
3 tbsp flour
1/2 cup milk
1/8 tsp pepper
Dumplings:
1 1/4 cup flour
2 tbsp parsley
2 tsp baking powder
1/2 tsp salt
3 tbsp butter
2/3 cup milk
Directions
Parsley Dumplings:
1. Mix flour, parsley, baking powder and salt in a medium bowl.
2. Cut in butter, using pastry blender or crisscrossing two knives, until mixture looks like fine crumbs.
3. Stir in milk.
Main dish:
1. Melt butter in Dutch oven or 12" skillet over medium high heat.
2. Cook chicken in margarine 15-20 minutes or until brown on all sides.
3. Drain butter.
4. Stir water, broccoli, salt, thyme, cloves and bay leaf into chicken.
5. Heat to boiling; reduce heat. Cover and simmer 40-50 minutes or until chicken is cooked.
6. Remove chicken; keep warm.
7. Remove bay leaf; discard.
8. Mix flour, milk, and pepper until smooth; pour into Dutch oven/skillet.
9. Boil and stir 1 minute; reduce heat.
10. Return chicken to Dutch oven/skillet.
12. Drop dumpling dough by rounded tablespoonfuls onto hot chicken (do not drop directly into liquid).
13. Cover tightly and cook 10-14 minutes or until dumplings are fluffly and dry on top.
