Meal: Penne with Chicken, Broccoli, and Cheese

Ingredients

1 cup broccoli florets, divided into tiny sprigs

1/4 cup butter

2 chicken breasts, cut into thin strips

2 garlic cloves, crushed

3 1/2 cups dried penne

1/2 cup dry white wine

1 cup heavy cream

3 1/2 oz Gorgonzola cheese, diced

salt

ground black pepper

Parmesan cheese, grated, to serve

Directions

1. Plunge broccoli into a pan of salted, boiling water.

2. Bring back to boil and boil for 2 minutes.

3. Drain and refresh under cold running water.

4. Shake well to remove surplus water and set aside to drain completely.

5. Melt butter in a large skillet.

6. Add chicken, garlic, and salt and pepper to taste; stir well.

7. Cook over medium heat for 3 minutes, or until chicken becomes white.

8. Meanwhile, start cooking pasta for 8-10 minutes or according to package directions.

9. Pour the wine and cream over the chicken mixture and stir to mix.

10. Simmer, stirring occasionally, for about 5 minutes, or until sauce has reduced and thickened and chicken is cooked through.

11. Add broccoli, increase heat, and toss to heat through and mix.

12. Drain the pasta and tip into the sauce.

13. Add gorgonzola and toss well.
